Tandoori dishes are marinated in yoghurt with a special selection of herbs and spices, then cooked in the tandoor.
The tandoor is an open top clay oven fired by charcoal at high temperature. This creates a unique cooking process giving the food a special flavour, sealing in all its goodness. The food is then finished with freshly ground herbs, spices and mixed cream, and served with salad and mint sauce.
